Associate Professor Liu Shao Quan is a faculty member of the Food Science and Technology Programme, National University of Singapore. At NUS, he mainly teaches food fermentation and flavour science. His research includes tropical fruit wines, specialty beer, coffee and tea bioconversion, lipid flavour transformation, food waste biovalorization (such as okara and tofu whey), probiotics stability and application. He is currently commercialising a probiotic beer
