James is the founder of Kim Kong Kimchi, a company that makes kimchi for Whole Foods, Planet Organic, a few fistfuls of independent grocers, and lately Finland. Before getting into kimchi, his background was as a pop culture journalist/editor and pop-up restauranteur, creating performative dining experiences on themes ranging from Las Vegas to the House of Medici. He sees fermentation as equal parts art and science, and has a terrifying number of fizz-related spreadsheets and kimchi calculators.
